It's a bad idea. From experience, "general discussion" forums with a section to "advertise your forum" take off fast, however seldom do they last very long. People just end up leaving after they post their ad.

I'd say you should go with something specific, and you can always add a small "General Discussion" section for off-topic posting.

And sports and gaming is overdone.

Something you enjoy talking about. For example, I can go on and on for hours about politics, but none of my friends want to hear it, lol. So I started a political forum.

You need to find something you can post A LOT about, because when your forum is young, you have to do all the posting. I started a couple hundred threads on my forum by myself.

You mentioned outdoors. Can you think of 100 topics pertaining to outdoors? Is it something you could talk about for a long time? Is it something you personally find interesting? I think the question you should be asking yourself right now is, "Would I want to join this forum?" If you wouldn't join an outdoors forum, no one else will either.
