what really got me was when I would ask them why the site is down and they would say it's up for them even though a monitoring script that I'd have on the site, would say it's down..
anyways, we use Fluid Hosting: FreeBSD and Windows Hosting now and the up-time is great as well as the support is top notch.

My current host (godaddy) the worst on the planet, keeps trying to sell me a newer server everytime something goes wrong.

Both are dual processor dual core xeons (4 x 2.0GHz per box), both have 4gig of ram, the front end server has one single 250gb sata II hard drive, the database server has four 73GB 15k scsi drives in raid 10.
Its actually really easy to split up vbulletin to two servers, its all done in the config.php file, rather then point to localhost, you point it to the IP of the dedicated server.

I would add 2 frontend servers, low-end, just to handle apache load balancing, then 1 server for storage, and 1-2 mysql ones, with load balancing. It`s hard to get it done, but easy for people that know it.
